Particularities
The mealted cheese product stays alive, because none of the usual melting salts are used for preservation (that is why the product has to keep chilled). The only used melting salt is citric acid (sodium citrate). The citrate is also approved for the production of organic sausage and is indispensable for the spreadability of the cheese specialties.
