Probably one of the most famous cheeses from Italy is the protected Grana Padano hard cheese.
This only be produced in northern Italy with cow's milk from the region. The wholly aromatic, spicy cheese ripens for at least 9 months and is characterized by a grainy, brittle consistency.

Compared to conventional Grana Padano our organic version is produced without lysozyme. This is possible
because the cows that deliver the milk for the cheese are not fed with silage during winter time, only with hay.
